We’ve shared a bit about how making bread has been a part of our life since the beginning. What you may not know is that my husband and I began our whole food journey after a struggle with infertility early in our marriage. Starting a family turned out to be more difficult than we anticipated, and the conventional solutions we sought did not address our health challenges. Thankfully, holistic medicine put us on a path to an ‘ingredients only kitchen’ where eating real food became the foundation for healing our bodies. We’ve been following the ‘new’ version of the Food Pyramid for quite some time now. The bread we bake and whole grains are regularly included in the diet for our family of five.

The previous Food Pyramid was perhaps influenced by industry-led interests and a lack of nutrition education in the medical field. This resulted in grains being placed at the foundation of our diets. Unfortunately, they did not distinguish between or discourage highly processed, white flour carbohydrate products from true whole grains. There is a difference!

Scientific studies are ongoing, but there is mounting evidence that these outdated recommendations have contributed to chronic illness epidemics. Conditions such as metabolic disorders, autoimmune diseases, cancer, and even mental health issues are on the rise. We truly are what we eat, and balance is key.
